Green Onion Dip with Plantain Chips
Avocado is one of my favorite things and is so versatile. I can take the unripe avocados with me when I travel for work and use them as they ripen. Avocado makes a delicious mayonnaise replacement for chicken or tuna salad and no need to worry about needing to refrigerate mayonnaise! Another travel friendly avocado use is dairy free and creamy dips. Two of my favorites are onion dip and guacamole. I love to make “nachos” for dinner, which usually featured a taco seasoned meat, salsa or fresh pico de gallo, and my homemade guacamole. My recipe has evolved over the years to accommodate my food sensitivities, but since I have gone completely grain and nightshade free my go-to guacamole delivery vehicle “nachos” has been off the menu. Plantain chips were a game changer – a crunchy chip that tastes great with my onion dip or guacamole! The basic dip is just avocados, lime or lemon juice, and avocado oil. The avocado oil is a secret ingredient that just makes the dip even more smooth and creamy! 
Here is how I make the basic dip with variations:
Avocado Dip
1 Ripe Avocado, pit removed and smashed with a fork.
1 tbsp. Lime or lemon juice
Salt to taste
Green Onion Dip
1 basic avocado dip recipe
            Stir in:
3- fresh green onions, chopped (or ¼ cup Thrive freeze dried green onion)
Ranch Avocado Dip
1 basic avocado dip recipe
            or
1 Ripe Avocado, pit removed and smashed with a fork
2 tbsp. coconut yogurt (this one has no gums or thickeners)
Salt to taste.
            Stir in:
1 tbsp. fresh minced sweet onion ( or 1 tbsp. Thrive freeze dried chopped onion)
1 tbsp. fresh minced dill (I use this freeze dried dill, also available at Costco)
1 tbsp. fresh minced parsley (1 tbsp. Thrive freeze dried parsley)
1 tbsp. fresh minced chives (1 tbsp. Thrive freeze dried chives)
Guacamole
1 basic avocado dip recipe
            Stir in:
3- fresh green onions, chopped (or ¼ cup Thrive freeze dried green onions)
1 tbsp. fresh minced cilantro (or 1 tbsp Thrive freeze dried cilantro)
            Optional:
Fresh or canned jalapenos (or Thrive freeze dried chili peppers)
